Instructions
- Cube the watermelon: Cut the seedless watermelon into bite-sized chunks. Remove any visible seeds and transfer the cubes to a large mixing bowl.
- Add feta and mint: Sprinkle the crumbled feta cheese and chopped mint evenly over the watermelon cubes in the bowl.
- Whisk the dressing: In a small bowl, combine olive oil, fresh lime or lemon juice, salt, and black pepper. Whisk until well blended.
- Toss gently: Drizzle the citrus dressing over the watermelon mixture. Toss gently with a large spoon or spatula to coat, being careful not to break up the watermelon or feta.
- Serve or chill: Serve the salad immediately if you like it fresh and crisp, or cover and chill it for 15–30 minutes to let the flavors meld and salad cool.
- Garnish (optional): For extra flair, drizzle balsamic glaze and top with extra mint or any of the other optional add-ins just before serving.
