Ingredients
For the Chicken & Marinade
- 1 pound boneless skinless chicken breast
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- 2 tablespoons lemon juice
- 1 tablespoon minced garlic
- 1 tablespoon Greek seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Vegetables
- 1 medium zucchini (cut into 1/2-inch pieces)
- 1/2 medium red onion (cut into 1/2-inch pieces)
- 1 cup cherry or grape tomatoes
For Serving
- 1/2 cup crumbled feta cheese
Instructions
- Pound the Chicken: Place the chicken breasts between two sheets of parchment paper or plastic wrap. Use a meat mallet or rolling pin to pound them to an even thickness. Transfer the chicken to a shallow dish or sealable bag.
- Mix the Marinade: In a small mixing bowl, whisk together the olive oil, white wine vinegar, lemon juice, minced garlic, Greek seasoning, salt, and black pepper until well combined.
- Marinate the Chicken: Pour half of the marinade over the chicken, ensuring it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (up to 8 hours) for best flavor.
- Prepare the Veggies: While the chicken marinates, chop the zucchini and red onion into bite-size pieces about 1/2 inch thick. Add them along with the tomatoes to a mixing bowl and toss with the remaining marinade.
- Preheat the Air Fryer: When ready to cook, preheat your air fryer to 400°F (200°C).
- Cook the Chicken: Place the marinated chicken breasts in the air fryer basket. Air fry for 7 minutes.
- Add the Vegetables: Flip the chicken, then add the marinated vegetables to the basket. Cook for an additional 7–8 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Serve: Transfer the chicken and veggies to plates and top with crumbled feta cheese. Enjoy hot.
Notes
- Marinate the chicken for at least 1 hour for best flavor, but you can go up to 8 hours.
- If your air fryer is small, cook in batches to avoid overcrowding.
- Other vegetables like bell peppers or mushrooms can be added as desired.
- Check the chicken’s temperature with a meat thermometer to ensure it’s cooked through.
- You can substitute Greek seasoning with a mix of oregano, thyme, and basil if needed.
