A quick and delicious meal featuring tender chicken and crispy Brussels sprouts, all coated in a flavorful sweet chili sauce. This air fryer recipe is perfect for busy nights when you need a healthy and satisfying dinner in just 30 minutes.

  • Total Time: 30 minutes
  • Yield: 2 servings

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 pound Brussels sprouts, halved
  • 1/4 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon honey (optional)
  • 1 tablespoon sesame seeds (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  • Preheat your air fryer to 375°F (190°C).
  • Season the chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
  • Place the chicken in the air fryer basket and cook for 10 minutes, flipping halfway through.
  • While the chicken is cooking, trim and halve the Brussels sprouts, then toss them with olive oil, salt, and pepper.
  • After 10 minutes, add the Brussels sprouts to the air fryer basket around the chicken. Continue cooking for another 10-12 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the Brussels sprouts are crispy.
  • In a small bowl, mix the sweet chili sauce, soy sauce, and honey (if using).
  • Once cooked, remove the chicken and Brussels sprouts from the air fryer and drizzle them with the sweet chili sauce mixture.
  • Garnish with sesame seeds and fresh cilantro if desired. Serve immediately.

Notes

  • Spicy Variation: Add sriracha or red pepper flakes for an extra kick.
  • Vegetarian Option: Substitute chicken with tofu or tempeh.
  • Gluten-Free: Use tamari instead of soy sauce.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat in the air fryer at 350°F (175°C) for 3-5 minutes.
