  • Yield: 8 servings

Ingredients

For the Dough:

  • ¼ cup warm water (105°F to 115°F)
  • 1 packet (2 ¼ tsp) active dry yeast
  • ½ cup warm milk (105°F to 115°F)
  • ¼ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 2 ¾ cups all-purpose flour
  • 2 large eggs

For the Cinnamon Filling:

  • ¼ cup unsalted butter, melted
  • ½ cup packed light brown sugar
  • 1 tbsp ground cinnamon

For the Icing:

  • 1 ½ cups powdered sugar, sifted
  • ½ tsp almond extract (or vanilla extract)
  • 23 tbsp milk (adjust for desired consistency)
  • Green, gold, and purple sanding sugars

Optional:

  • 1 plastic baby figurine (for tradition)

Instructions

1. Prepare the Dough:

  1. Dissolve yeast in warm water in a large mixing bowl. Let sit for 5 minutes until foamy.
  2. Add warm milk, softened butter, sugar, nutmeg, and salt. Mix well.
  3. Stir in 1 cup of flour until smooth, then add eggs and the remaining flour gradually, forming a soft dough.
  4. Knead on a lightly floured surface for about 5 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.

2. Prepare the Cinnamon Filling:

  1. In a small bowl, mix melted butter, brown sugar, and cinnamon.

3. Assemble the King Cake:

  1. Roll the dough into a 30×9-inch rectangle.
  2. Spread the cinnamon filling evenly over the dough, leaving a small border.
  3. Roll the dough tightly from the long edge and pinch the seam to seal.
  4. Cut the roll in half lengthwise, keeping the cut sides up.
  5. Twist the halves together and shape into a ring on a greased baking sheet. Pinch ends together.

4. Second Rise:

  1. Cover and let rise for another 20-40 minutes until puffy.

5. Bake:

  1. Preheat oven to 350°F (175°C).
  2. Bake for 30 minutes or until golden brown. Let cool before icing.

6. Prepare the Icing & Decorate:

  1. Whisk together powdered sugar, almond extract, and milk until smooth.
  2. Drizzle icing over the cooled cake.
  3. Immediately sprinkle with green, gold, and purple sanding sugars in alternating sections.
  4. If using a plastic baby figurine, insert it into the cake before serving.
