Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 cups beef broth

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion, bell pepper, and garlic to the pot and sauté until softened.
  3. Stir in diced tomatoes, kidney beans, pinto beans, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper.
  4. Pour in beef broth and bring to a boil. Reduce heat and simmer for 30 minutes, stirring occasionally.
  5. Taste and adjust seasoning as needed before serving.
