Ingredients
- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- ½ small red onion, diced
- 3 cloves garlic, minced
- 8 ounces feta cheese
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon red pepper flakes
- 1 cup chopped baby spinach
- 4 large eggs
- Optional: Chopped fresh basil or chives for garnish
Instructions
- Preheat the Oven: Set the oven to 400°F (200°C).
- Prepare the Base: In an oven-safe dish, combine cherry tomatoes, bell pepper, red onion, and garlic. Place the block of feta in the center and drizzle with olive oil.
- Season the Dish: Mix dried oregano, sea salt, thyme, black pepper, and red pepper flakes. Sprinkle over the dish.
- Bake Vegetables & Feta: Bake for 25 minutes until the vegetables are tender and feta is soft.
- Add Spinach: Remove from the oven and stir in the chopped spinach.
- Add the Eggs: Make four small wells and crack an egg into each.
- Final Bake: Return to the oven and bake for 10 more minutes, or until egg whites are set but yolks remain runny.
- Garnish & Serve: Sprinkle with fresh basil or chives and serve warm with crusty bread.
