Instructions
- Preheat the oven to 400°F (200°C).
- Toss cubed potatoes with olive oil, oregano, garlic powder, salt, and pepper. Spread them evenly on a baking sheet.
- Bake for 25-30 minutes until the potatoes are golden and tender.
- Sprinkle crumbled feta cheese over the hot potatoes and bake for an additional 5-7 minutes until the cheese softens and melts slightly.
- Garnish with fresh parsley and serve immediately.
