Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cups cooked rice
- 1 avocado, sliced
- 1/4 cup cucumber, sliced
- 1/4 cup carrots, julienned
- 2 tbsp mayonnaise
- 1 tbsp sriracha sauce
- 1 tsp sesame oil
- 1 tbsp soy sauce
- 1/2 tsp sesame seeds (optional)
Instructions
- Cook the shrimp in a skillet over medium heat for 2-3 minutes per side, until pink and cooked through.
- In a small bowl, mix mayonnaise, sriracha sauce, and sesame oil until well combined.
- Divide the cooked rice between bowls.
- Top each bowl with shrimp, avocado, cucumber, and carrots.
- Drizzle with spicy mayo and soy sauce.
- Garnish with sesame seeds, if desired.
