These Blueberry Oatmeal Bars are a wholesome, fruity treat featuring a sweet blueberry filling sandwiched between layers of buttery oat crumble. Naturally sweetened and easy to make, they’re perfect for breakfast, snacks, or even a light dessert. With the option to use gluten-free flour or coconut oil, they’re easily customizable for various dietary needs.

  • Total Time: 50 minutes
  • Yield: 9 bars

Ingredients

Oat Crumble Base & Topping

  • 1 cup old-fashioned oats
  • 3/4 cup all-purpose flour (or gluten-free flour blend)
  • 1/3 cup light brown sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 6 tablespoons unsalted butter, melted (or coconut oil)
  • 1 teaspoon vanilla extract

Blueberry Filling

  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup granulated sugar
  • 2 teaspoons cornstarch

Instructions

  1. Prepare Pan & Preheat Oven: Preheat your oven to 375°F (190°C). Line an 8-inch square baking pan with parchment paper, allowing some paper to hang over the edges for easy removal of the bars later.
  2. Make Oat Mixture: In a large mixing bowl, combine the oats, flour, brown sugar, baking soda, salt, and cinnamon (if using). Stir well to evenly distribute the ingredients.
  3. Add Wet Ingredients: Add the melted butter and vanilla extract to the dry mixture. Mix until a crumbly dough forms and all dry spots are moistened.
  4. Form Base: Press half of the oat mixture firmly and evenly into the bottom of your prepared pan to form a solid base layer.
  5. Prepare Blueberry Filling: In a separate bowl, toss together the blueberries, granulated sugar, and cornstarch until the berries are well coated and the sugar is evenly distributed.
  6. Assemble Layers: Evenly spread the blueberry filling over the oat base. Sprinkle the remaining oat mixture over the top, gently pressing it down so it adheres.
  7. Bake: Place the pan in the oven and bake for 35-40 minutes, or until the top is golden brown and the blueberry filling is bubbly.
  8. Cool & Cut: Remove the pan from the oven and let the bars cool completely on a wire rack. Once cooled, use the parchment overhang to lift the bars out, then cut into squares.

Notes

  • Both fresh and frozen blueberries work well; if using frozen, do not thaw before adding.
  • For a dairy-free version, substitute coconut oil for butter.
  • Let bars cool completely before cutting for clean slices.
  • Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for longer freshness.
  • Add a handful of chopped nuts to the oat mixture for extra crunch, if desired.
