Instructions

  1. Make the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, honey (or maple syrup), and lemon juice. Simmer for about 5 minutes, stirring occasionally, until the blueberries soften and break down slightly. If you’d like a thicker compote, dissolve the cornstarch in 1 tablespoon of water, then stir it into the simmering berries. Let the compote cool completely before proceeding.
  2. Prepare the Yogurt Base: In a mixing bowl, stir the Greek yogurt and vanilla extract together until smooth and creamy. Taste and add a little extra honey or maple syrup if you prefer a sweeter bite.
  3. Fill the Molds: Spoon the yogurt mixture into silicone molds or a mini muffin tin, filling each cavity about three-quarters full so there’s space for the swirl.
  4. Add the Blueberry Swirl: Place a small spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Use a toothpick or skewer to gently swirl the compote into the yogurt to create a marbled, artistic effect.
  5. Freeze: Transfer the molds to the freezer and freeze for at least 3 hours, or until the bites are solid and fully set.
