Ingredients
- 2 large chicken breasts
- 1 cup orzo pasta
- 1 tbsp olive oil
- 1 1/2 cups chicken broth
- 1 (5.2 oz) package Boursin cheese (Garlic & Herb)
- 1 cup fresh spinach, chopped
- 1/4 cup Parmesan cheese, grated
- Salt and pepper, to taste
Instructions
- Cook the orzo according to package instructions. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes per side until golden brown and fully cooked. Remove from the skillet and slice.
- In the same skillet, add chicken broth and Boursin cheese. Stir until melted and smooth.
- Stir in the cooked orzo and spinach, cooking until the spinach wilts.
- Top with sliced chicken and sprinkle with Parmesan cheese. Serve warm.
Notes
- Add More Veggies: Try mushrooms, sun-dried tomatoes, or roasted bell peppers.
