Ingredients

  • 2 large chicken breasts
  • 1 cup orzo pasta
  • 1 tbsp olive oil
  • 1 1/2 cups chicken broth
  • 1 (5.2 oz) package Boursin cheese (Garlic & Herb)
  • 1 cup fresh spinach, chopped
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper, to taste

Instructions

  • Cook the orzo according to package instructions. Drain and set aside.
  • Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes per side until golden brown and fully cooked. Remove from the skillet and slice.
  • In the same skillet, add chicken broth and Boursin cheese. Stir until melted and smooth.
  • Stir in the cooked orzo and spinach, cooking until the spinach wilts.
  • Top with sliced chicken and sprinkle with Parmesan cheese. Serve warm.
