Instructions

  1. Cook the Beef: In a large non-stick skillet over medium-high heat, cook and crumble the ground beef until it is no longer pink. Transfer the cooked beef to a paper towel-lined mixing bowl to drain excess grease. Set aside and wipe out the skillet with a paper towel.
  2. Scramble the Eggs: In the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour in the beaten eggs. Once the eggs begin to set, gently stir to scramble. Continue cooking until the eggs are just set and no liquid remains. Remove from heat.
  3. Combine Beef and Eggs: Discard the paper towel from under the beef, leaving the beef in the bowl. Add the scrambled eggs to the beef and gently stir to combine and evenly distribute both ingredients. Set aside.
  4. Prep the Bread: Wipe the skillet clean. Butter one side of each slice of bread with the remaining butter (about 2 tablespoons).
  5. Assemble the Sandwich: Heat the skillet over medium heat. Place one slice of bread, butter side down, into the skillet. Top with one slice of Colby-Jack cheese, about 1/2 cup of the beef-egg mixture, another slice of cheese, and cap with a second slice of bread (butter side up).
