Ingredients
- 1 pound (450g) rotini or penne pasta
- 2 tablespoons olive oil
- 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup (240ml) buffalo wing sauce
- 1 cup (240ml) ranch or blue cheese dressing
- 2 cups (200g) shredded sharp cheddar cheese
- 1 cup (100g) shredded mozzarella cheese
- ½ cup (50g) grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Fresh parsley or green onions, chopped (for garnish)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C).
Step 2: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add the pasta and cook until al dente according to package instructions.
- Drain the pasta and set it aside.
Step 3: Prepare the Chicken
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken pieces and cook until browned and fully cooked, about 5-7 minutes.
- Season with salt and pepper to taste.
Step 4: Sauté the Aromatics
- Add the diced onion to the skillet with the chicken and sauté until translucent (about 3 minutes).
- Add the minced garlic and cook for another minute until fragrant.
Step 5: Combine the Sauces
- Pour in the buffalo wing sauce and ranch or blue cheese dressing.
- Stir to combine and let the mixture simmer for 2-3 minutes to meld the flavors.
Step 6: Assemble the Bake
- In a large mixing bowl, combine the cooked pasta, chicken mixture, and half of each cheese (cheddar, mozzarella, and Parmesan).
- Mix until everything is well coated.
Step 7: Bake
- Transfer the mixture to a greased 9×13-inch baking dish.
- Top with the remaining cheeses.
- Bake for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown on top.
Step 8: Garnish and Serve
- Remove from the oven and let cool for a few minutes.
- Garnish with chopped fresh parsley or green onions.
- Serve warm and enjoy!
