Ingredients
For the Casserole:
- 1 lb ground beef
- 1 medium onion, chopped
- 3 cups cabbage, chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup cooked rice
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- ½ cup beef broth
For Topping:
- 1 cup shredded cheddar cheese
Instructions
1. Preheat & Prepare
- Preheat oven to 350°F (175°C).
- Grease a 9×13-inch baking dish.
2. Cook the Beef
- In a large skillet, cook ground beef & onion over medium heat until beef is browned and onion is soft.
- Drain excess fat.
- Stir in garlic powder, salt, and black pepper.
3. Assemble the Casserole
- Layer half of the chopped cabbage in the baking dish.
- Spread beef mixture evenly over the cabbage.
- Sprinkle cooked rice on top.
- Pour diced tomatoes (with juice) over the mixture.
- Add the remaining cabbage on top.
- Gently pour beef broth over the dish for added moisture.
4. Bake
- Cover with foil and bake for 45 minutes.
5. Add Cheese & Finish Baking
- Remove foil.
- Sprinkle cheddar cheese evenly over the top.
- Bake uncovered for 10-15 minutes, until cheese is bubbly & golden brown.
6. Serve & Enjoy!
- Let cool slightly before serving.

Notes
- Make it Low-Carb: Swap rice for cauliflower rice or omit it entirely.
