  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

2 chicken breasts, diced

2 tbsp Cajun seasoning

8 oz penne pasta

1 tbsp olive oil

4 oz cream cheese, softened

1 cup heavy cream

1/2 cup shredded mozzarella cheese

1/2 cup Parmesan cheese

1/4 cup green onions, chopped

Instructions

  • Preheat the Oven: Preheat the oven to 375°F (190°C) and grease a baking dish.

  • Cook the Pasta: Cook the penne pasta according to package instructions, then drain and set aside.

  • Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add diced chicken and Cajun seasoning. Cook for 7-8 minutes until the chicken is browned and cooked through.

  • Make the Sauce: Add softened cream cheese and heavy cream to the skillet, stirring until the sauce is smooth. Add shredded mozzarella and Parmesan cheese, stirring until melted and well combined.

  • Combine Pasta and Sauce: Add cooked pasta to the skillet and toss to coat the pasta evenly with the creamy sauce.

  • Bake: Pour the pasta mixture into the prepared baking dish and bake for 20-25 minutes, or until the top is golden and bubbly.

  • Garnish and Serve: Garnish with chopped green onions and serve hot.

Notes

  • Add Veggies: Stir in sautéed bell peppers, spinach, or mushrooms for extra flavor and nutrition.

  • Spice it Up: Add red pepper flakes or a spicier Cajun seasoning for more heat.

  • Cheese Variations: Swap mozzarella and Parmesan for gouda, cheddar, or pepper jack for different flavor profiles.

  • Different Pasta: Swap penne for rigatoni, fusilli, or elbow macaroni for variety.
