Ingredients

  • 1 cup cottage cheese
  • 1/3 cup marinara sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 2 tbsp diced bell pepper
  • 1 tbsp sliced black olives
  • 1/2 cup shredded mozzarella cheese
  • 23 tbsp additional marinara sauce (for topping)
  • **8 pepperoni slices
  • Salt and pepper to taste
  • Fresh basil or chili flakes for garnish (optional)

Instructions

1. Preheat the Oven:

  • Preheat your oven to 400°F (200°C).

2. Prepare the Base:

  • In a large bowl, combine cottage cheese, marinara sauce, garlic powder, Italian seasoning, diced bell pepper, and sliced black olives.
  • Mix well until all ingredients are evenly combined.

3. Add Mozzarella Cheese:

  • Stir in half of the shredded mozzarella cheese into the mixture.

4. Assemble the Bowls:

  • Divide the cottage cheese mixture evenly into two oven-safe ramekins or bowls.

5. Add Toppings:

  • Top each bowl with 1-2 tbsp of additional marinara sauce, the remaining shredded mozzarella cheese, and pepperoni slices.

6. Bake:

  • Place the bowls in the preheated oven and bake for 15-16 minutes, or until the cheese is melted and bubbly.

7. Garnish and Serve:

  • Remove from the oven and let cool slightly.
  • Garnish with fresh basil or chili flakes if desired.
