Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) so it’s ready once you’ve assembled the casserole ingredients.
- Brown the Beef: In a large skillet over medium heat, cook the ground beef until fully browned and no longer pink. Drain excess fat if needed. Add diced onion and minced garlic; sauté for 2-3 minutes until the vegetables are softened and fragrant.
- Add Pasta, Tomatoes, and Broth: Stir in the uncooked elbow macaroni, canned diced tomatoes with their juice, and beef broth. Mix everything together thoroughly to combine all the flavors.
- Season the Mixture: Sprinkle in the salt, black pepper, and Italian herbs. Bring the mixture to a gentle boil, then immediately reduce heat to low and let it simmer for about 3-4 minutes, just enough for the flavors to meld.
- Add Cheese: Fold in half of the shredded cheddar cheese, mixing until it’s melted and distributed evenly throughout the beef and pasta mixture.
- Bake: Transfer the entire mixture to an oven-safe baking dish. Top with the remaining cheddar cheese, spreading it into an even layer. Bake uncovered for 20-25 minutes, or until the casserole is bubbly and the cheese is golden brown.
Notes
- If you want extra creaminess, stir a splash of milk into the pasta mixture before baking.
- Substitute ground turkey or chicken for a lighter variation.
- Feel free to add diced bell peppers or mushrooms alongside the onions for more vegetables and flavor.
- This casserole can be made ahead and refrigerated before baking. Just add 5-10 minutes to the bake time if baking directly from the fridge.
