Instructions
- Prepare the Tater Tots: Preheat the oven as directed on the tater tots package and cook the tater tots until they are golden and crispy. Set aside.
- Cook and Season the Beef: In a skillet over medium heat, brown the ground beef. Season with salt and pepper to taste. When fully cooked, drain any excess grease.
- Mix the Filling: In a large mixing bowl, combine the cooked ground beef, slightly crushed crispy tater tots, shredded cheddar, and Monterey Jack cheeses. Mix until everything is well incorporated.
- Warm the Tortillas: Heat the flour tortillas in a dry skillet or in the microwave for 10-15 seconds until pliable. This will help prevent cracking during assembly.
- Assemble the Burritos: Spoon a generous amount of filling onto the center of each tortilla. Drizzle with Taco Bell chipotle sauce and add a dollop of sour cream.
- Fold the Burritos: Fold the sides of each tortilla over the filling, then fold the bottom up and roll tightly to secure each burrito.
- Bake with Cheese: Arrange the burritos in a baking dish and sprinkle extra shredded cheese on top. Bake in the oven for a few minutes until the cheese is melted and bubbly.
- Garnish and Serve: Remove burritos from the oven. Garnish with diced tomatoes, green onions, and cilantro if desired. Serve hot with additional sour cream and chipotle sauce on the side.
