Chicken Adobo is a savory Filipino classic that’s simple to make and full of rich, tangy flavors. This dish features tender chicken marinated in a soy sauce and vinegar-based sauce with garlic, bay leaves, and peppercorns, then simmered until juicy and tender. It’s the ultimate comfort food that pairs perfectly with steamed rice, making it a satisfying one-pan meal everyone will love.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

4 chicken thighs, bone-in

1/4 cup soy sauce

1/4 cup white vinegar

5 cloves garlic, minced

2 bay leaves

1 teaspoon black peppercorns

1/2 teaspoon salt

2 tablespoons vegetable oil

Instructions

  • In a bowl, combine soy sauce, vinegar, garlic, bay leaves, peppercorns, and salt. Add the chicken thighs and marinate for 30 minutes to 1 hour.

  • Heat vegetable oil in a large skillet over medium-high heat. Brown the chicken thighs on both sides, about 4 minutes per side.

  • Add the marinade to the skillet and bring it to a boil. Reduce the heat to low and simmer for 30-35 minutes, or until the chicken is tender and fully cooked.

  • Serve with steamed rice and enjoy!

Notes

  • Add sliced potatoes for a heartier meal that will absorb the sauce’s flavor.

  • Spice it up with chopped chili peppers or hot sauce in the marinade.

  • For a creamier version, stir in coconut milk during simmering.
