Instructions
Prepare the Chipotle Mayo (Optional):
- In a small bowl, mix mayonnaise with chipotle or adobo sauce. Adjust for spice level.
Assemble the Sandwich:
- Lay out two slices of bread and spread chipotle mayo (or plain mayo) evenly.
- Layer the shredded or sliced chicken onto one slice, seasoning with salt and black pepper.
- Place avocado slices on top and season with a squeeze of lemon or lime juice.
- Add the cheese slices and fresh cilantro or arugula (if using).
- Top with the second slice of bread.
Grill the Sandwich:
