Ingredients
2 chicken breasts, cubed
2 cups basmati rice
1 onion, sliced
2 tablespoons tikka masala paste
1/2 cup yogurt
2 cups chicken broth
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt to taste
Fresh cilantro for garnish
Instructions
-
Sauté the onions: In a large pot, sauté the sliced onions until golden brown.
-
Cook the chicken: Add the cubed chicken to the pot and cook until browned.
-
Add the spices and yogurt: Stir in the tikka masala paste, yogurt, ground cumin, and ground coriander. Cook for 3-4 minutes to let the flavors combine.
-
Simmer the broth: Add chicken broth, bring to a simmer.
-
Cook the rice: Add basmati rice to the pot, cover, and cook for 20 minutes, or until the rice is tender and the liquid is absorbed.
-
Garnish and serve: Garnish with fresh cilantro and serve immediately.
Notes
-
Brown rice substitution: Brown rice can be used but will require a longer cooking time and more liquid.
-
Vegetarian version: Replace chicken with tofu or mixed vegetables like peas, carrots, and bell peppers for a vegetarian option.
-
Using pre-cooked chicken: You can use pre-cooked chicken, just add it when you add the broth and spices.
-
Spiciness: Adjust the spice level by using mild tikka masala paste or reducing the amount used.
-
Rice cooker version: Sauté the onions and chicken separately, then transfer to a rice cooker with rice, broth, and spices.
