- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 cup Boursin cheese (garlic & fine herbs)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh thyme, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then cook for 6-7 minutes per side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- Add the minced garlic to the skillet and sauté for 1 minute, until fragrant.
- Stir in the Boursin cheese, heavy cream, and chicken broth. Bring the mixture to a simmer.
- Let the sauce simmer for 5 minutes, or until it thickens slightly.
- Return the chicken to the skillet and coat with the sauce. Simmer for an additional 3-4 minutes to heat through.
- Garnish with fresh thyme before serving.
