Ingredients
For the Dough:
- 2 1/2 cups all-purpose flour
- 1/2 tsp salt
- 3/4 cup warm water
- 2 tbsp vegetable oil
For the Filling:
- 1 lb ground beef
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tbsp rice vinegar
- 1/2 tsp sugar
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 3 scallions, chopped
- 1/2 tsp ground black pepper
For Frying:
- 1/4 cup vegetable oil
Instructions
Prepare the Dough:
- Mix the Dough: In a large bowl, combine flour and salt. Gradually add warm water and vegetable oil, mixing until a dough forms.
- Knead & Rest: Knead the dough for 5 minutes until smooth. Cover with a damp cloth and let rest for 20 minutes.
Prepare the Filling:
- Cook the Beef: Heat sesame oil in a skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart.
- Season: Stir in garlic, ginger, and scallions, cooking for 1-2 minutes until fragrant.
- Sauce: Add soy sauce, oyster sauce, rice vinegar, sugar, and black pepper. Cook for another 2-3 minutes. Remove from heat and let cool.
Assemble the Pies:
- Divide & Roll: Divide the dough into 12 equal portions and roll each into a ball. Flatten into 4-inch circles.
- Fill & Seal: Place a tablespoon of beef filling in the center. Fold into a half-moon shape, pinch edges to seal, then flatten slightly into a disc.
Cook the Pies:
- Pan-Fry: Heat vegetable oil in a non-stick skillet over medium heat.
- Fry in Batches: Cook pies for about 4 minutes per side, until golden brown and crispy.
Serve & Enjoy:
- Serve hot with soy sauce, chili oil, or black vinegar for dipping.
Notes
- For a spicy kick, add chopped chilies or red pepper flakes.
- For a vegetarian version, substitute mushrooms or tofu for beef.
- For a baked option, bake at 375°F (190°C) for 25-30 minutes, flipping halfway.
- For extra crispiness, let the pies rest on a wire rack after frying.
