Instructions
1. Prepare the Chicken:
- In a small bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, black pepper, and lime juice.
- Rub the spice mixture over the chicken breasts and let them marinate for at least 15 minutes.
2. Grill the Chicken:
- Heat a grill or pan over medium heat.
- Cook the chicken for about 5-6 minutes per side until fully cooked (internal temperature should reach 165°F). Let the chicken rest for a few minutes before slicing it into thin strips.
3. Make the Chipotle Ranch Sauce:
- In a small bowl, combine ranch dressing, chipotle pepper, lime juice, and garlic powder.
- Stir well to combine.
4. Warm the Tortillas:
- Warm the flour tortillas in a dry pan or microwave for a few seconds until they’re soft and pliable.
5. Assemble the Burritos:
- On each tortilla, layer:
- Rice
- Black beans
- Grilled chicken
- Cheddar cheese
- Diced tomatoes
- Shredded lettuce
- Drizzle with chipotle ranch sauce.
- Fold in the sides of the tortilla and roll it tightly into a burrito.
6. Optional: Grill the Burritos:
- For a crispy finish, lightly grill the burrito seam-side down in a pan for about 2 minutes until golden brown.
