Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder

  • Juice of 1 lime

For the Chipotle Ranch Sauce:

  • ½ cup ranch dressing
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1 tsp lime juice
  • ½ tsp garlic powder

For the Burritos:

  • 4 large flour tortillas
  • 1 cup cooked rice
  • ½ cup black beans, drained and rinsed
  • ½ cup shredded cheddar cheese
  • ½ cup diced tomatoes
  • ½ cup shredded lettuce
  • ¼ cup chopped cilantro (optional)

Instructions

1. Prepare the Chicken:

  • In a small bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, black pepper, and lime juice.
  • Rub the spice mixture over the chicken breasts and let them marinate for at least 15 minutes.

2. Grill the Chicken:

  • Heat a grill or pan over medium heat.
  • Cook the chicken for about 5-6 minutes per side until fully cooked (internal temperature should reach 165°F). Let the chicken rest for a few minutes before slicing it into thin strips.

3. Make the Chipotle Ranch Sauce:

  • In a small bowl, combine ranch dressing, chipotle pepper, lime juice, and garlic powder.
  • Stir well to combine.

4. Warm the Tortillas:

  • Warm the flour tortillas in a dry pan or microwave for a few seconds until they’re soft and pliable.

5. Assemble the Burritos:

  • On each tortilla, layer:
    • Rice
    • Black beans
    • Grilled chicken
    • Cheddar cheese
    • Diced tomatoes
    • Shredded lettuce
    • Drizzle with chipotle ranch sauce.
  • Fold in the sides of the tortilla and roll it tightly into a burrito.

6. Optional: Grill the Burritos:

  • For a crispy finish, lightly grill the burrito seam-side down in a pan for about 2 minutes until golden brown.
