- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or 1 small grated apple

- 1/2 tsp cinnamon
- 1 tbsp honey or maple syrup (optional, for added sweetness)

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
- Mix Ingredients: In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well combined.
- Let Batter Sit: Allow the batter to sit for 5 minutes to let the oats absorb some moisture, making the bites fluffier.
- Bake: Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top. Bake for 18-20 minutes or until the bites are set and lightly golden on top.
- Cool and Serve: Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely. Enjoy warm or store in the fridge for up to 4 days.
