Cinnamon Apple Cottage Cheese Bites combine the comforting flavors of apple pie with the goodness of cottage cheese and oats. These mini, protein-packed bites are easy to make, perfect for meal prep, and can be enjoyed as a healthy snack or grab-and-go breakfast. With a touch of cinnamon and apple sweetness, they’re a warm and satisfying treat!

  • Total Time: 25 minutes
  • Yield: 12 bites

Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional, for added sweetness)
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
  2. Mix Ingredients: In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well combined.
  3. Let Batter Sit: Allow the batter to sit for 5 minutes to let the oats absorb some moisture, making the bites fluffier.
  4. Bake: Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top. Bake for 18-20 minutes or until the bites are set and lightly golden on top.
  5. Cool and Serve: Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely. Enjoy warm or store in the fridge for up to 4 days.

Notes

  • For extra crunch, stir in chopped nuts like almonds, walnuts, or pecans.
  • Add dried fruit like cranberries or raisins for natural sweetness.
  • To make it vegan, substitute the egg with a flax egg and use maple syrup instead of honey.
