Cinnamon Roll Sugar Cookies are a delicious fusion of two beloved treats: the chewy, melt-in-your-mouth texture of sugar cookies with the warm, spiced flavor of cinnamon rolls. Coated with cinnamon-sugar and a rich buttery base, these cookies are perfect for any occasion, delivering comfort and sweetness in every bite.

  • Total Time: 20 minutes
  • Yield: 12 cookies

Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

1 cup sugar

1 egg

1 teaspoon vanilla extract

1/4 cup cinnamon-sugar mix (for topping)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

  • In a large mixing bowl, beat the softened butter and sugar together until light and fluffy.

  • Add the egg and vanilla extract, mixing until well combined.

  • Gradually add the dry ingredients to the wet mixture, mixing until the dough forms.

  • Roll the dough into small balls and coat each ball in the cinnamon-sugar mixture.

  • Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.

  • Bake for 8–10 minutes, or until the edges of the cookies are golden brown.

  • Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.

Notes

  • Add icing: Drizzle a simple glaze made with powdered sugar and milk for an extra sweet finish.

  • Make them chewy: For a softer texture, slightly underbake the cookies and let them rest on the baking sheet.

  • Add a nutty twist: Stir in chopped pecans or walnuts for a crunchy surprise.

  • Pumpkin spice version: Add nutmeg and cloves for a fall-inspired variation.
