Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
1 cup sugar
1 egg
1 teaspoon vanilla extract
1/4 cup cinnamon-sugar mix (for topping)
Instructions
-
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
-
In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
-
In a large mixing bowl, beat the softened butter and sugar together until light and fluffy.
-
Add the egg and vanilla extract, mixing until well combined.
-
Gradually add the dry ingredients to the wet mixture, mixing until the dough forms.
-
Roll the dough into small balls and coat each ball in the cinnamon-sugar mixture.
-
Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
-
Bake for 8–10 minutes, or until the edges of the cookies are golden brown.
-
Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
Notes
-
Add icing: Drizzle a simple glaze made with powdered sugar and milk for an extra sweet finish.
-
Make them chewy: For a softer texture, slightly underbake the cookies and let them rest on the baking sheet.
-
Add a nutty twist: Stir in chopped pecans or walnuts for a crunchy surprise.
-
Pumpkin spice version: Add nutmeg and cloves for a fall-inspired variation.
