Pineapple

Instructions
- Prepare the Pineapple: Peel and cut the fresh pineapple into bite-sized chunks. Set any excess juice aside, and place the pineapple pieces in a mixing bowl.
- Prepare the Coconut Coating: In a separate bowl, combine the shredded coconut with Greek yogurt and honey or maple syrup if you’re using them. Mix until you get a cohesive, sticky mixture. For a simpler version, you can skip the yogurt and honey and just use the shredded coconut.
- Coat the Pineapple: Using your hands or a fork, take each pineapple chunk and thoroughly coat it in the coconut mixture, making sure all sides are covered. For a lighter version, simply roll the pineapple in the shredded coconut until fully coated.
- Chill the Bites: Arrange the coated pineapple bites on a serving platter or tray. Refrigerate for at least 30 minutes so the coating firms up and flavors meld together.
