- 2 ripe bananas, mashed
- 3 eggs
- 1/2 cup cottage cheese
- 3 tablespoons maple syrup (adjust to taste)
- 2 teaspoons vanilla extract
- 2 1/2 cups almond flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon

Instructions
- Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper and grease it.
- In a large bowl, mix together mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract until smooth.
- Stir in almond flour, baking soda, and cinnamon until fully combined. The batter may be a bit chunky due to the cottage cheese – this is normal!
- Pour the batter into the prepared loaf pan. Bake for about 50 minutes, covering with foil after 30 minutes if the top starts to brown too quickly. Test with a toothpick to check for doneness.
- Let the bread cool before slicing. Serve and enjoy!
