 - ½ tsp onion powder
 - ½ tsp garlic powder
 - 1 tsp Italian seasoning, divided
 - 1 cup cottage cheese
 - ¼ cup shredded Italian cheese blend (mozzarella, provolone, Parmesan, Asiago, Fontina, Romano)
 - ¼ cup marinara sauce
 - Fresh parsley, chopped (for garnish)
 
Instructions
- Season the Chicken:
- Preheat your air fryer.
 - Season the chicken breast with salt, pepper, onion powder, garlic powder, and ½ tsp Italian seasoning.
 
 - Air Fry the Chicken:
- Cook the seasoned chicken in the air fryer for 15-20 minutes, or until it reaches an internal temperature of 165°F (75°C). Adjust time based on thickness.
 
 - Blend the Cottage Cheese:
- While the chicken cooks, blend the cottage cheese until smooth using a blender or immersion blender.
 - Transfer to a microwave-safe bowl and heat for 20-30 seconds. Stir in the remaining ½ tsp Italian seasoning.
 
 - Assemble the Bowl:
- Slice or dice the cooked chicken.
 - Layer the smooth cottage cheese in a bowl, then top with the chicken pieces.
 - Sprinkle the shredded Italian cheese blend over the chicken and drizzle with marinara sauce.
 
 - Melt the Cheese:
- Microwave the assembled bowl for 15-20 seconds to melt the cheese.
 
 - Garnish and Serve:
- Top with chopped parsley and serve warm.

- For extra crispiness, coat the chicken in gluten-free breadcrumbs before air frying.
