Ingredients

  • 1 boneless, skinless chicken breast

  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning, divided
  • 1 cup cottage cheese
  • ¼ cup shredded Italian cheese blend (mozzarella, provolone, Parmesan, Asiago, Fontina, Romano)
  • ¼ cup marinara sauce
  • Fresh parsley, chopped (for garnish)

Instructions

  • Season the Chicken:
    • Preheat your air fryer.
    • Season the chicken breast with salt, pepper, onion powder, garlic powder, and ½ tsp Italian seasoning.
  • Air Fry the Chicken:
    • Cook the seasoned chicken in the air fryer for 15-20 minutes, or until it reaches an internal temperature of 165°F (75°C). Adjust time based on thickness.
  • Blend the Cottage Cheese:
    • While the chicken cooks, blend the cottage cheese until smooth using a blender or immersion blender.
    • Transfer to a microwave-safe bowl and heat for 20-30 seconds. Stir in the remaining ½ tsp Italian seasoning.
  • Assemble the Bowl:
    • Slice or dice the cooked chicken.
    • Layer the smooth cottage cheese in a bowl, then top with the chicken pieces.
    • Sprinkle the shredded Italian cheese blend over the chicken and drizzle with marinara sauce.
  • Melt the Cheese:
    • Microwave the assembled bowl for 15-20 seconds to melt the cheese.
  • Garnish and Serve:
    • Top with chopped parsley and serve warm.
