Instructions
- Preheat Oven:
- Preheat your oven to 200°C (392°F).
- Blend Ingredients:
- In a bowl or blender, combine cottage cheese, eggs, Greek yogurt, vanilla stevia (or extract), and sweetener, if using. Blend until smooth.
- Divide and Prepare:
- Divide the mixture evenly into two oven-safe bowls.
- Bake:
- Place the bowls in the upper part of the oven and bake for 14–18 minutes, or until the soufflés are golden brown on top, set around the edges, but still slightly wobbly in the center. Avoid overbaking to keep the soufflés moist.
- Cool and Serve:
- Remove from the oven, let cool slightly, and top with fresh fruits, berries, jam, or your favorite toppings before serving.

- For a savory version, skip the sweetener and vanilla, and add chopped herbs, cheese, or vegetables.
