Ingredients
1 tablespoon olive oil
1 lb boneless, skinless chicken breasts, diced
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 package (16 oz) gnocchi
1 cup spinach, chopped
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions

Cook the Chicken: Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned on all sides. Remove chicken and set aside.

Sauté the Onion and Garlic: In the same pot, sauté chopped onion and minced garlic for 3-4 minutes until softened and fragrant.

Add the Broth and Gnocchi: Pour in chicken broth and bring to a boil. Stir in gnocchi and cook according to package instructions (about 3 minutes).

Return the Chicken and Add Cream: Add cooked chicken back to the pot. Stir in heavy cream, chopped spinach, Italian seasoning, salt, and pepper. Simmer for another 5 minutes or until the soup thickens.
