Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion, garlic, and carrot. Sauté for about 5 minutes until softened.
- Stir in the vegetable broth and diced tomatoes. Bring to a boil.
- Add the gnocchi and cook for about 5 minutes, until they float to the top.
