Instructions

  1. Wash the zucchinis and cut off the ends. Grate them using a box grater or food processor, then place in a colander.
  2. Sprinkle salt over the zucchini and let it sit for 10–15 minutes to draw out moisture.
  3. Squeeze the zucchini firmly using your hands or a clean kitchen towel to remove as much liquid as possible.
  4. In a mixing bowl, combine egg, flour, Parmesan (if using), minced garlic, black pepper, and paprika. Whisk until smooth. Add the zucchini and parsley, and stir until well combined.
  5. Scoop 2 tablespoons of the batter at a time and shape into small patties of even thickness. Place on a plate.
  6. Heat olive oil in a skillet over medium heat. Add fritters and cook for 3–4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to absorb excess oil.
  7. Serve warm with your favorite dipping sauce, such as sour cream or tzatziki, and sprinkle with extra parsley.
