Ingredients
- 1 pound lean ground beef
- 1 packet taco seasoning
- ½ cup red enchilada sauce
- 10 corn tortillas
- 1 cup shredded Oaxaca cheese (or Monterey Jack, Cheddar, or Mexican blend)
- 1 tablespoon olive oil

- Pico de gallo
- Salsa
- Sour cream
Instructions
Step 1: Cook the Beef
- Heat a skillet over medium-high heat and add the ground beef.
- Cook, breaking it apart, until browned. Drain excess fat if needed.
- Stir in taco seasoning and enchilada sauce.
- Simmer for 5 minutes, then remove from heat.
Step 2: Prepare the Tortillas
- Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds until pliable.
- Lightly brush one side of each tortilla with olive oil.
Step 3: Assemble the Tacos
- Preheat oven to 450°F (232°C).
- Place tortillas oiled side down on a nonstick or ceramic baking sheet.
- Sprinkle cheese on half of each tortilla, then spoon beef mixture on top.
- Fold each tortilla in half and gently press down.
Step 4: Bake the Tacos
- Bake for 16 minutes, flipping halfway, until golden brown and crispy.
Step 5: Serve & Enjoy
- Remove from the oven and let cool slightly.
- Serve with guacamole, pico de gallo, salsa, or sour cream.
