Ingredients

  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • ½ cup red enchilada sauce
  • 10 corn tortillas
  • 1 cup shredded Oaxaca cheese (or Monterey Jack, Cheddar, or Mexican blend)
  • 1 tablespoon olive oil

Instructions

Step 1: Cook the Beef

  1. Heat a skillet over medium-high heat and add the ground beef.
  2. Cook, breaking it apart, until browned. Drain excess fat if needed.
  3. Stir in taco seasoning and enchilada sauce.
  4. Simmer for 5 minutes, then remove from heat.

Step 2: Prepare the Tortillas

  1. Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds until pliable.
  2. Lightly brush one side of each tortilla with olive oil.

Step 3: Assemble the Tacos

  1. Preheat oven to 450°F (232°C).
  2. Place tortillas oiled side down on a nonstick or ceramic baking sheet.
