Ingredients

  • 3 lbs chicken breast, cut into 1-inch pieces
  • 5 tablespoons all-purpose flour
  • 1½ teaspoons salt, plus more to serve
  • 1 teaspoon garlic powder
  • 1 cup buttermilk
  • 2 cups panko breadcrumbs
  • 1 cup vegetable or canola oil, for frying

Instructions

1️⃣ Prepare the Coatings

  1. In a medium bowl, mix flour, salt, and garlic powder.
  2. Pour buttermilk into a separate bowl.
  3. Place panko breadcrumbs on a plate.

2️⃣ Coat the Chicken

  1. Dredge each chicken piece in the flour mixture, ensuring an even coat.
  2. Dip the floured chicken into the buttermilk, allowing excess to drip off.
  3. Roll the chicken in panko breadcrumbs until fully coated.
  4. Transfer coated pieces to a platter.

3️⃣ Fry the Chicken

  1. Heat 1 inch of oil in a deep frying pan over medium heat to 350°F (175°C).
  2. Fry the chicken in small batches, ensuring space between pieces.
  3. Cook, turning as needed, until golden brown and the internal temperature reaches 165°F (74°C).
  4. Remove and place on a paper towel-lined plate to drain excess oil.

4️⃣ Serve

  1. While warm, lightly sprinkle the chicken with additional salt if desired.
  2. Serve with your favorite dipping sauces.
