Ingredients
For the Chicken:
- 2 tbsp butter
- 1 tbsp oil (use oil from sun-dried tomatoes for extra flavor)
- 1 tsp dried Italian herbs
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 boneless, skinless chicken breasts
For the Sauce:
- ½ cup sun-dried tomatoes, chopped
- ½ cup white wine (or chicken broth)
- ½ cup heavy cream (or sour cream)
- ½ cup freshly grated Parmesan cheese
- 1 tsp cornstarch mixed with 1 tbsp cold water (optional, for thickening)
For Garnish (Optional):
- Fresh parsley or basil, chopped
- Extra Parmesan cheese
Instructions
1. Prepare the Chicken:
- Pat chicken breasts dry and season both sides with salt, pepper, Italian herbs, garlic powder, and paprika.
2. Sear the Chicken (Optional but Recommended):
- In a large skillet, heat butter and oil over medium heat.
- Sear the chicken for 2-3 minutes per side until golden brown.
3. Transfer to Slow Cooker:
- Place the seared chicken into the slow cooker.
- Sprinkle chopped sun-dried tomatoes over the chicken.
4. Add Liquid & Cook:
- Pour white wine (or chicken broth) over the chicken.
- Cover and cook on LOW for 1.5 to 2 hours (or HIGH for 45 minutes to 1 hour), until the chicken reaches 165°F (75°C).
5. Finish the Sauce:
- Remove chicken and set aside.
- Stir in heavy cream (or sour cream) and let warm through.
- If a thicker sauce is desired, mix in the cornstarch slurry and cook on HIGH for 10 minutes.
6. Add Cheese & Herbs:
- Stir in Parmesan cheese and fresh parsley or basil.
- Return chicken to the slow cooker, coating it in the sauce.
7. Serve & Enjoy:
- Serve warm over pasta, rice, or mashed potatoes.
- Garnish with extra Parmesan and fresh herbs, if desired.
