  • Total Time: 35 minutes
  • Yield: 9 bars

Ingredients

2 ripe bananas (mashed)

½ cup Greek yogurt

¼ cup peanut butter

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 cup oat flour

¼ cup cocoa powder

½ teaspoon baking soda

¼ cup dark chocolate chips

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8×8-inch pan, or line it with parchment paper.

  • Mix the Wet Ingredients: In a large bowl, combine the mashed bananas, Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir until smooth and well-combined.

  • Add the Dry Ingredients: Stir in the oat flour, cocoa powder, and baking soda until just combined.

  • Fold in Chocolate Chips: Gently fold in the dark chocolate chips, ensuring they’re evenly distributed throughout the batter.

  • Bake: Pour the batter into the prepared pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  • Cool and Slice: Allow the bars to cool completely before slicing them into 9 squares.

Notes

  • Variations: Swap peanut butter for almond or cashew butter, or add chia seeds, flaxseeds, or dried fruit (raisins or cranberries) for extra texture and nutrition.

  • Sweeteners: Adjust the sweetness to your liking by adding more or less honey or maple syrup, or use a sugar-free sweetener like stevia or monk fruit.

  • Storage: Store bars in an airtight container at room temperature for up to 5 days, refrigerate for up to a week, or freeze for up to a month. Reheat by microwaving for 10-15 seconds.
