Instructions
- In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth. Gradually add the heavy cream and beat until light and fluffy. Set aside.
- In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt. In another small bowl, whisk the egg, milk, and vanilla extract together. Combine the wet and dry ingredients, stirring until the batter is smooth.
- Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).
- Scoop small spoonfuls of the cheesecake filling and dip them into the batter, coating them evenly.
- Carefully drop the battered cheesecake bites into the hot oil, frying for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
- In a small bowl, toss the sliced strawberries with granulated sugar and let them macerate for 10-15 minutes.
- Serve the deep-fried cheesecake bites topped with the sweetened strawberries and a dusting of powdered sugar.
