Ingredients
- 2 cups low-fat cottage cheese
- 2 tsp vanilla extract
- ¼ cup maple syrup
- 2 cups oat flour (or rolled oats)
- 2 tbsp unsalted peanut butter
- Pinch of salt
- ½ cup vanilla protein powder
- 1 cup dark chocolate chips
Instructions
- Blend cottage cheese, vanilla extract, maple syrup, peanut butter, and salt in a blender or food processor until smooth.
- Transfer the mixture to a bowl. Gradually mix in the oat flour and protein powder until well combined.
- Fold in the dark chocolate chips.
- Scoop tablespoon-sized portions of the dough and roll into balls. Place on a parchment-lined baking sheet.
- Freeze the bites for at least 30 minutes, or until firm.
- Transfer to an airtight container and store in the freezer. Defrost for 10 minutes before enjoying.

- Use gluten-free oat flour for a gluten-free version.
- Adjust sweetness by adding more maple syrup or a sugar-free sweetener.
