Ingredients

4 chicken breasts

1 cup long-grain white rice

2 cups chicken broth

1 cup tzatziki sauce (store-bought or homemade)

1 tbsp olive oil

1/2 tsp garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  • Place chicken breasts in the dish and drizzle with olive oil. Season with salt, pepper, and garlic powder.

  • In a separate bowl, mix the rice, chicken broth, remaining salt, and pepper.

  • Pour the rice mixture around the chicken.

  • Cover the baking dish tightly with foil and bake for 35–40 minutes, until the chicken reaches 165°F (74°C) and rice is tender.

  • Remove from oven, spoon tzatziki sauce over each chicken breast, and garnish with fresh parsley.

  • Don’t pre-cook the rice—it will cook perfectly in the oven.
