Ingredients
4 chicken breasts
1 cup long-grain white rice
2 cups chicken broth
1 cup tzatziki sauce (store-bought or homemade)
1 tbsp olive oil
1/2 tsp garlic powder
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions

Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

Place chicken breasts in the dish and drizzle with olive oil. Season with salt, pepper, and garlic powder.

In a separate bowl, mix the rice, chicken broth, remaining salt, and pepper.

Pour the rice mixture around the chicken.

Cover the baking dish tightly with foil and bake for 35–40 minutes, until the chicken reaches 165°F (74°C) and rice is tender.

Remove from oven, spoon tzatziki sauce over each chicken breast, and garnish with fresh parsley.
