Ingredients
2 cups almond flour
2 tablespoons coconut flour
2 teaspoons baking powder
1/4 cup Swerve sweetener
1/4 teaspoon salt
1/4 cup butter, melted
2 large eggs
1/4 cup unsweetened almond milk
1 tablespoon cinnamon
1/4 cup Swerve sweetener (for filling)
2 tablespoons butter (for filling)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, coconut flour, baking powder, sweetener, and salt.
- In another bowl, whisk together melted butter, eggs, and almond milk. Add to the dry ingredients and mix until a dough forms.
- Roll out the dough on a piece of parchment paper into a rectangle shape.
- For the filling, melt the butter and mix with cinnamon and sweetener. Spread it evenly over the dough.
- Roll the dough tightly, then slice into 8 rolls and place on the prepared baking sheet.
- Bake for 15-18 minutes, until golden brown. Allow to cool slightly before serving.
Notes
- For best results, use finely ground almond flour.
- You can substitute Swerve sweetener with your preferred keto-friendly sweetener.
- Make sure the dough is tightly rolled to avoid gaps in the cinnamon rolls.
- Allow cooling time before serving to properly set the rolls.
