  • Total Time: 30 minutes (plus chilling)
  • Yield: 12 bars

Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1/2 cup unsalted butter, melted

1 can (14 oz) sweetened condensed milk

1/2 cup fresh lime juice (key lime or regular)

2 large eggs

Lime zest for garnish

Instructions

  • Preheat oven to 350°F (175°C).

  • In a bowl, combine graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.

  • Press into the bottom of a greased 9×9-inch baking dish to form an even crust.

  • In another bowl, whisk together sweetened condensed milk, lime juice, and eggs until smooth.

  • Pour filling over the crust and smooth the top.

  • Bake for 15–20 minutes, until the center is just set.

  • Cool to room temperature, then refrigerate for at least 2 hours.

  • Garnish with lime zest, slice into bars, and serve chilled.

Notes

  • Make Ahead: Chill overnight for best flavor and texture.

  • Whipped Topping: Add a dollop of whipped cream just before serving for extra indulgence.

  • Coconut Twist: Mix shredded coconut into the crust for a tropical variation.
