  • Total Time: 40 minutes
  • Yield: 6 servings

Ingredients

For the Casserole:

  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) French onion soup
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme (optional)
  • Salt and pepper, to taste

Optional Topping:

  • Shredded cheese (cheddar or mozzarella)

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Cook the Ground Beef: Heat olive oil over medium-high heat in a large skillet. Add the ground beef, breaking it up as it cooks. Brown for 5-7 minutes, then drain excess fat. Stir in garlic powder, thyme, salt, and pepper, and set aside.
  • Cook the Rice: Cook the rice according to the package instructions and set it aside.
  • Combine the Ingredients: In a large bowl, combine the cooked beef, rice, French onion soup, and undrained diced tomatoes. Mix well.
  • Bake the Casserole: Transfer the mixture to a greased 9×13-inch baking dish. Cover with foil and bake for 25-30 minutes, or until heated through.
  • Add the Cheese (Optional): In the last 5 minutes of baking, sprinkle shredded cheese on top and return the casserole to the oven, uncovered, until the cheese is melted and bubbly.
  • Serve: Let the casserole rest for a few minutes before serving.

Notes

  • Vegetables: Add frozen peas, corn, or carrots for extra flavor.
  • Cheese Options: Cheddar, mozzarella, or parmesan are great choices for the topping.
  • Substitute Meat: Swap the ground beef for turkey or chicken for a lighter version.
  • Herb Variations: Use fresh thyme or oregano for a fresher flavor.
  • Spicy Option: Add red pepper flakes or hot sauce for a little heat.
