Ingredients
1 large tortilla
2 eggs
½ cup shredded cheese
1 tbsp butter or oil
Salt & pepper to taste
Optional: hot sauce, avocado, or salsa
Instructions
-
Fry the Eggs: Heat the butter or oil in a skillet over medium heat. Crack in one egg and fry it to your desired doneness—sunny side up, over-easy, or well-done. Once done, set the egg aside.
-
Prepare the Quesadilla: In the same skillet, lay the tortilla flat. Sprinkle shredded cheese over half of the tortilla, then place the fried egg on top of the cheese.
-
Cook the Quesadilla: Fold the tortilla in half, covering the egg and cheese. Cook for 2-3 minutes on each side, pressing gently with a spatula until the tortilla is golden and crispy, and the cheese is melted.
-
Serve: Cut the quesadilla into wedges and serve with your favorite toppings like hot sauce, avocado, or salsa. Enjoy!
Notes
-
-
Vegetarian Version: Add sautéed spinach, mushrooms, or bell peppers for extra flavor and nutrition.
-
Spicy Kick: Spice it up with sriracha, jalapeños, or chili flakes inside the quesadilla.
-
Cheese Variety: Use pepper jack, cheddar, or mozzarella for a unique flavor twist.
-
Toppings: Add fresh avocado, a squeeze of lime, or your favorite salsa for an extra burst of flavor.
-
-
Storage/Reheating: Best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 1 day. To reheat, place the quesadilla on a skillet over medium heat for a few minutes on each side until crispy again.
