  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

1 lb chicken breast, diced

1 tbsp olive oil

2 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup Parmesan cheese, grated

1 tsp Italian seasoning

1 lb gnocchi, cooked

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook for about 6-7 minutes until browned on all sides. Remove the chicken and set it aside.

  • Sauté the Garlic: In the same skillet, add the minced garlic and sauté for 1-2 minutes, until fragrant.

  • Make the Creamy Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer. Add the grated Parmesan cheese, Italian seasoning, salt, and pepper. Stir until the cheese has melted and the sauce thickens slightly.

  • Combine the Chicken and Gnocchi: Return the cooked chicken to the skillet. Add the cooked gnocchi and stir everything together. Cook for an additional 2-3 minutes, until the gnocchi is heated through and well coated in the creamy sauce.

  • Garnish and Serve: Garnish with fresh parsley before serving.

Notes

  • Vegetarian Version: Skip the chicken and substitute with mushrooms or tofu for a vegetarian version.

  • Spicy Kick: Add a pinch of red pepper flakes for some heat.

  • Greens: Add spinach, kale, or other veggies to the skillet for extra nutrition.

  • Gluten-Free: Use gluten-free gnocchi to make this dish gluten-free.
