3 cups cooked rice
2 tablespoons vegetable oil
4 cloves garlic, minced
1/2 cup frozen peas and carrots
2 eggs, beaten
1 tablespoon soy sauce
1/2 teaspoon sesame oil
Salt and pepper to taste
Instructions

Heat vegetable oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Push the vegetables to one side of the skillet, then pour the beaten eggs into the empty space. Scramble the eggs until fully cooked.
