- 1 cup plain or vanilla Greek yogurt

Instructions
1️⃣ Preheat & Prep – Preheat the oven to 350°F (175°C). Grease or line a 9-inch round cake pan.
2️⃣ Mix Dry Ingredients – In a bowl, whisk together flour, baking powder, baking soda, and salt.
3️⃣ Mix Wet Ingredients – In a separate bowl, beat Greek yogurt, oil, sugar, eggs, and vanilla extract until smooth. Stir in lemon zest if using.
4️⃣ Combine – Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
5️⃣ Bake – Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
6️⃣ Cool & Serve – Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar before serving if desired.
