- 3 medium potatoes, peeled and diced
- 1 red bell pepper, diced

- Salt and pepper, to taste
- ¼ cup beef broth or water (optional)
- Chopped green onions, for garnish
Instructions
Sauté Aromatics:
- In a large skillet or Dutch oven, heat olive oil over medium heat.
- Add onion and garlic, sautéing for 2-3 minutes until the onion softens.
Cook Ground Beef:
- Add ground beef to the skillet, breaking it apart as it cooks. Cook for 5-7 minutes until browned.
Add Vegetables and Seasonings:
- Stir in diced potatoes and red bell pepper.
- Season with paprika, cumin, salt, and pepper, mixing well.
Simmer:
- If using, pour in beef broth or water to help cook the potatoes.
- Cover the skillet and simmer for 15-20 minutes, stirring occasionally, until the potatoes are fork-tender.
Finish and Serve:
- Remove from heat and garnish with chopped green onions.
- Serve warm and enjoy!
