 - 1/4 cup almond milk

 - 1/2 tsp maple syrup (optional)
 - Greek yogurt and cinnamon for topping
 
Instructions
- In a blender, combine protein powder, oats, eggs, cinnamon, baking powder, almond milk, vanilla extract, and maple syrup. Blend until smooth.
 - Heat a non-stick skillet over medium heat and lightly coat with cooking spray.
 - Pour a small amount of the batter into the skillet and swirl to form a thin layer.
 - Cook for 1-2 minutes per side, until lightly golden and cooked through.
 - Stack the crepes and top with Greek yogurt and a sprinkle of cinnamon.
 
Notes
- For a sweeter taste, use the optional maple syrup in the batter.
