2 large sweet potatoes, peeled and diced

Instructions

Preheat oven to 400°F (200°C).

Toss diced sweet potatoes with olive oil, salt, and pepper. Roast on a baking sheet for 25–30 minutes, flipping halfway through.

Meanwhile, heat a skillet over medium heat with olive oil. Brown ground turkey until cooked through.

Add onion and garlic; sauté 2–3 minutes until softened.

Stir in cumin, paprika, salt, and pepper.

Transfer roasted sweet potatoes to a baking dish, top with turkey mixture, and bake for another 10 minutes.
